In food processing, sodium bicarbonate is the most widely used leavening agent. Adding about 0.1% to 0.2% of sodium bicarbonate when washing fruits and vegetables can stabilize their green color. When used as a treatment for fruits and vegetables, sodium bicarbonate increases the pH value, improves the water-holding capacity of proteins, softens the texture of food tissues, and dissolves astringent compounds. Additionally, it has a deodorizing effect on goat's milk, with a usage rate of 0.001% to 0.002%.
